I agree with thecat, the lens you choose will give you the DOF you want. Put that lens on any of the bodies and you will get your shot.

Take a good look at the latest Pentax line – K100D, K100D Super and the K10D. The K100D series are 6.1mp; the Super adds dust removal for the sensor. The 1K0D is 10mp and has dust removal. All 3 have Image Stabilization (IS) in the camera body. Every K-mount lens ever made will mount to these cameras. Yes, you’ll have to use manual focus but at least they will benefit from IS.
The K100D cameras are probably dropping in price since the K10D was introduced.

Any entry level DSLR sounds fits you perfectly. Usually I recommend the Nikon D40 or the Canon Digital Rebel XT/350D. Other have recommends you the Pentax which is pretty good too. They are fairly comparable in performance and price and if you really want to get one… I’d suggest you go to a camera shop and compare it yourself with your own hand.

I’m a big fan of Cannon and i have a 400D, i’m extremely satisfy with it and i recommend you to consider that if you are not that hardcore photographer. All of the SLR are expensive. So there’s no loophole to go around that. i recommend you to check out books from library to learn more about the basics of SLR camera before you do buy it. Those kind of books usually teaches you how to take certain kind of pictures as well. Or if you are in college like me, you could take photography courses and learn more about SLR before you choose. Buying camera also varies on how often do you take pictures and what kind of pictures do you take since you would need different lenses. Please also take note on other accessories that may needed such as memory card(big memory card..at least 1-2GB since each photo is around 4MB), lense, stand, and bag.

If want to get some shallow depth of field pictures, most kit lenses come with the cameras won’t work that well. You will need a large aperture lens or longer focal length lens.
For example,
Canon EF-S 17-55 f/2.8 IS
Canon EF 50mm f/1.4
Canon EF 85mm f/1.8
Canon EF 70-200mm f/4 IS L

Any Digital SLR will run you 700+.
I suggest starting with a film SLR.
Find one on ebay for under $100.
Shoots great and you learn a lot more than the automatic digital help that many digital SLRs have.
Then once you feel that photography is actually something worth investing in, then research and find one right for you!
